Young fennel, halved and then sliced into wedges keeping stem intact. Tbs. Extra-virgin olive oil Salt and Pepper ¼ C.  Good balsamic vinegar (the aged 10 yr. or more is great stuff) Any fresh herbs in the garden, as much as you can bear. 1. 2. 3. 4. 5. 6. Prepare Roasted Potato Salad. 2. Pre-heat grill and get coals nice and hot. 3. Grill steaks to medium. Flank can be tough rare and well done. Set aside to rest for five minutes. 4. Prepare Asparagus Sauté. 5. After steak has rested, slice across the grain for maximum tenderness. 6. Roasted Potato Salad 2 Rub steaks with olive oil. Season well with salt, cracked fennel seeds, and pepper. Allow meat to come to room temperature. 1. Place a sheet pan in a 350° oven and allow it to get hot. Place potatoes and fennel in a large mixing bowl. Drizzle with 2-3 tablespoons olive oil. Season generously with salt and pepper. Toss well. When sheet pan is hot, dump potatoes and fennel onto it. Spread into a single layer. When cooked, remove potatoes and fennel to a bowl. Drizzle immediately with balsamic vinegar. Allow to cool to room temperature. Toss with herbs, adjust seasonings. If the salad seems dry, add a little extra olive oil and/or vinegar. VENISON RECIPES “World Class” Venison Stew 2 lb. venison steaks 2 to 3 T. Vegetable oil 6 c. hot water 2 T. Worcestershire sauce 1 T. salt 1 T. sugar 1 ½ tsp. paprika ¾ tsp. pepper Dash of cloves 4 tsp. beef bouillon 1 med. onion, thinly sliced 2 to 3 lg. carrots, cut to bite-size 2 lg. potatoes, cut to bite-size 2 bay leaves 1 sm. pkg. frozen corn 1 sm. pkg. frozen peas 8 T. cornstarch Small amount of cold water Cube venison steaks into bite-size pieces and brown in vegetable oil. In crockpot, combine browned meat, water, Worcestershire sauce, salt, sugar, paprika, pepper, cloves, beef bouillon, onion, potatoes and bay leaves. Cook for 6 hours. Add corn and peas. Cook for 1 hour. Mix cornstarch with small amount of cold water and add to stew. Simmer until stew thickens. Remove bay leaves.
