Tbs. Tbs. Olive oil Cracked fennel seeds Ground black pepper Roasted Potato Salad Asparagus Sauté Crusty Bread 2-3 2-3 #  New potatoes as small as possible, washed and well dried ea.  Young fennel, halved and then sliced into wedges keeping stem intact. Tbs. Extra-virgin olive oil Salt and Pepper ¼ C.  Good balsamic vinegar (the aged 10 yr. or more is great stuff) Any fresh herbs in the garden, as much as you can bear. 1. 2. 3. 4. 5. 6. Prepare Roasted Potato Salad. 2. Pre-heat grill and get coals nice and hot. 3. Grill steaks to medium. Flank can be tough rare and well done. Set aside to rest for five minutes. 4. Prepare Asparagus Sauté. 5. After steak has rested, slice across the grain for maximum tenderness. 6. Roasted Potato Salad 2 Rub steaks with olive oil. Season well with salt, cracked fennel seeds, and pepper. Allow meat to come to room temperature. 1. Place a sheet pan in a 350° oven and allow it to get hot. Place potatoes and fennel in a large mixing bowl. Drizzle with 2-3 tablespoons olive oil. Season generously with salt and pepper. Toss well. When sheet pan is hot, dump potatoes and fennel onto it. Spread into a single layer. When cooked, remove potatoes and fennel to a bowl. Drizzle immediately with balsamic vinegar. Allow to cool to room temperature. Toss with herbs, adjust seasonings. If the salad seems dry, add a little extra olive oil and/or vinegar. Tips and Recipes for Cooking Grass-Fed Beef 1. Your biggest culprit for tough grass fed beef is overcooking. This beef is made for rare to medium rare cooking. If you like well done beef, then cook your grass fed beef at very low temperatures in a sauce to add moisture. 2. Since grass fed beef is extremely low in fat, coat with virgin olive oil, truffle oil or a favorite light oil for flavor enhancement and easy browning. The oil will, also, prevent drying and sticking. 3. We highly recommend the Jaccard meat tenderizer which uses no chemicals. This tenderizer has won the prestigious Gold Medal presented by Chefs in America and the easiest way to produce a great meal. Plus in literally seconds the Jaccard will tenderize all your meats including grass fed beef, grain feed beef, poultry, veal, venison, pork and lamb. 4. If you don't own a Jaccard meat tenderizer, we recommend marinating your beef before cooking especially lean cuts like NY Strip and Sirloin Steak. Choose a recipe that doesn't mask the delicate flavor of grass fed beef but enhances the moisture content. A favorite marinade using lemon, vinegar, wine, beer or bourbon is a great choice. Some people use their favorite Italian salad dressing. If you choose to use bourbon, beer or vinegar, use slightly less than you would use for grain fed beef. Grass fed beef cooks quicker so the liquor or vinegar won't have as much time to cook off. For safe handling, always marinate in the refrigerator. 5. If you do not have time to marinate and don't own a Jaccard meat tenderizer, just coat your thawed steak with your favorite rub, place on a solid surface, cover with plastic and pound your steak a few times to break down the connective tissue. As an added benefit your favorite rub will be pushed into your grass fed beef. Don't go overboard and flatten your beef unless your recipe calls for it. There’s turkey and dressing, cranberry sauce, mashed potatoes and gravy, some good veggies, and best of all…Pumpkin Pie for dessert! YUM! You’ve probably always had pumpkin pie on Thanksgiving, and maybe Christmas, too, but where did pumpkin come from? No, not in the local market! Pumpkins have an interesting history, and you can trace them back about 9,000 years to different places in Central America. The name ‘pumpkin’ originated from a very old Greek word, ‘pepon’, and over centuries was finally changed into ‘pumpkin’ by the early American colonists. Native Americans used pumpkins in several different ways: when they cleaned the seeds out, they used them for medicine. They would boil them and make a kind of tea that they drank for different sicknesses. They also used them to rub on a snakebite, because they believed the seeds would draw the snake venom (poison) out of the wound. Many years later, the American colonists thought pumpkin seeds would remove freckles if they rubbed them over their faces. Another way Native Americans used the pumpkins was to slice them into long strips, dry them, and then weave them into mats for them to sleep on. Sometimes they even wove them into the long grasses that some tribes used to build their wigwams. When there were pumpkins left over after all the work was done, the Indians cut them into long strips, roasted them over an open fire, and ate them. This was a real treat. The first ‘pumpkin pie’ occurred when the early colonists sliced the top off, cleaned out all the seeds, and filled the inside with milk, spices, and honey, and then baked it in hot ashes.
