Tips and Recipes for Cooking Grass-Fed Beef

Tips and Recipes for Cooking Grass-Fed Beef 1. Your biggest culprit for tough grass fed beef is overcooking. This beef is made for rare to medium rare cooking. If you like well done beef, then cook your grass fed beef at very low temperatures in a sauce to add moisture. 2. Since grass fed beef is extremely low in fat, coat with virgin olive oil, truffle oil or a favorite light oil for flavor enhancement and easy browning. The oil will, also, prevent drying and sticking. 3. We highly recommend the Jaccard meat tenderizer which uses no chemicals. This tenderizer has won the prestigious Gold Medal presented by Chefs in America and the easiest way to produce a great meal. Plus in literally seconds the Jaccard will tenderize all your meats including grass fed beef, grain feed beef, poultry, veal, venison, pork and lamb. 4. If you don't own a Jaccard meat tenderizer, we recommend marinating your beef before cooking especially lean cuts like NY Strip and Sirloin Steak. Choose a recipe that doesn't mask the delicate flavor of grass fed beef but enhances the moisture content. A favorite marinade using lemon, vinegar, wine, beer or bourbon is a great choice. Some people use their favorite Italian salad dressing. If you choose to use bourbon, beer or vinegar, use slightly less than you would use for grain fed beef. Grass fed beef cooks quicker so the liquor or vinegar won't have as much time to cook off. For safe handling, always marinate in the refrigerator. 5. If you do not have time to marinate and don't own a Jaccard meat tenderizer, just coat your thawed steak with your favorite rub, place on a solid surface, cover with plastic and pound your steak a few times to break down the connective tissue. As an added benefit your favorite rub will be pushed into your grass fed beef. Don't go overboard and flatten your beef unless your recipe calls for it. If you don't have a meat mallet, use a rolling pin or whatever you feel is safe and convenient. 6. Stove top cooking is great for any type of steak . . . including grass fed steak. You have more control over the temperature than on the grill. You can use butter in the final minutes when the heat is low to carry the taste of ...

CAULIFLOWER STEAK >> 1 cauliflower yields approx 3 “steaks” Ingredients: 1 head of cauliflower Olive oil Kosher salt (table salt or sea salt or whatever you have) Pepper Chopped handful of parsley (optional) © Disney Take 1 head of cauliflower and clean off all leaves from the bottom. Cut off the stalk, so that it’s flush with the rest of the cauliflower body. Take the cauliflower and place on its side so that the stalk is in front of you horizontally. Take a sharp knife and cut the cauliflower through its body, so that you are making crosssections of pieces. Once cut, the stalk is in the middle holding all florets together It’s ok if when cutting, some of the florets come loose, you can roast those pieces later. Once you have all your “steaks” cut, place them on a roasting tray. Drizzle with olive oil, salt & pepper and chopped parsley if you have, or even like it! Rub the steaks all over on both sides. Heat BBQ / grill on medium/high heat. Place “steaks” on grill and begin to cook approx 3-5 minutes on each side. They should have nice grill marks on both sides. Once all steaks are done, insert a fork to check that they are tender. Place back on roasting tray and cover with foil, sealing all edges. The heat from the steaks sealed in the foil will continue to cook the steaks until they become nice and tender. That’s it! You’re done! So easy you’re laughing!! DisneyJunior.com/ThatsFresh

www.FarmProgress.com – June 2011 39 Kansas Farmer Business Watch Diversification is the future at Taylors’ 4-Star Hydroponics LIVING BASIL: Jarrod Taylor looks over the latest product at 4-Star Hydroponics: living basil. The company is growing the herb for Kroger, where it will be marketed with the rootball intact. T TRAINING TOMATOES: Lee Taylor walks on stilts down the rows of growing tomatoes to adjust the wires they’re trained to climb. The vines are leaned a few inches forward every few days to encourage new branches to climb. How hydroponic tomatoes are grown in Kansas H YDROPONIC vegetables have been grown in Holland for generations. The plant genetics used at 4-Star Hydroponics in St. John were developed in the Netherlands, and the seeds for the hydroponic family farming operation are imported from Holland. “These plants have been bred to grow well in greenhouse conditions, and to root well in the perlite and nutrient water we grow them in,” Taylor says. Each plant is rooted in a gallon container of perlite; drip irrigation tubes keep the growing medium wet with water that has been enriched with nutrients normally found in fertile soil. He says the plants have also been bred to produce the fruit size and pulp consistency that consumers associate with slicing tomatoes. Generally, he says, tomatoes are considered a fairly easy crop to grow. “They are, in the sense that they survive and are pretty forgiving,” he...
